This is a small “waffle” cake pressing of 2022 Spring harvested Bai Mu Dan plucking. Each cake is pressed into a waffle-like shape that is convenient for breaking apart by hand. Each mini cake is 80 grams.

Fuding is the home to three famous teas. Bai Hao Yin Zhen (Silver Needles), Bai Lin Hong Cha (aka Golden Monkey), and Bai Mu Dan (aka White Peony). Fuding area teas enjoy fair weather and rich loamy soil giving them a special sweet and fruity quality. Our “White Peony” is harvested from first flush of Spring harvested tea.

The taste is sweet and fruity, with very little astringency. We recommend brewing with 90C water gong fu style to get the best taste from this wonderful tea!

芝兰香 literally means “Zhi Lan Orchid Aroma”. Zhi Lan orchids are thick and sweet with an especially pungent aroma. This is a high mountain pluck from older trees (Lao Cong) growing at an altitude of 1200 meters.

The aroma when brewed at first reminds us of cured cannabis flowers and orchids. The taste is thick and pungent, with sweetness and little or no astringency. The tea has body and seems to expand in the mouth. The after-taste is noticeable and long with a soothing lubricating effect on the mouth and throat.

Roast level: Light to Medium

Just 3.5 kilograms in total produced!

Jin Yao Shi has been grown for about 100 years by just a few families. Our tea is from one of the two original gardens with leaves being picked from 15 to 60 year old bushes and trees.

Jin Yao Shi is typically processed with a medium level of roasting and ours is a traditional medium roast style. Smooth with a fruity, sweet minerality! We recommend aging this tea in a sealed pouch or air-tight canister for at least 6 months!

“Ba Xian” also known as the Eight Immortals Dan Cong grows in a couple of villages (Phoenix, Ping Keng Tou, and Zhong Shan) in the Wu Dong mountains typically at an elevation of 500-700 meters. The original eight plants of this varietal date back to the Song dynasty. Of the original eight plants only one survived and it was from this “Mother” plant (now called F1) that “Ba Xian” survived and spread. For this reason it also called “Ba Xian Guo Hai” ( Cross the Ocean) Today Ba Xian is grown in a few villages (in Wu Dong) but is not mass produced.

Ba Xian is a special varietal in that it has 53 distinct aromatic molecules in it. It is also grown completely naturally without the use of pesticides, using composted chicken manure as it’s sole fertilizer.

The taste is strong with an up-front bitterness that quickly fades in to a fruit and flower sweetness. It has a distinct White Magnolia (白玉兰香) aroma to it.

An incredibly unique tea, grown naturally and carefully processed to preserve it’s lovely character.

Spring Harvest from Ping Keng Tou village (850 meters)

Only 15 kilograms in total produced!

This “Yu Lan Xiang” (玉兰香) Dan Cong is from the middle mountain elevation (1150 meters) in Tou She village in the Wu Dong mountains in Northern Guangdong. “Yu Lan Xiang” means literally “Magnolia Aroma” and is a unique varietal that is native to Wu Dong area. Yu Lan Xiang varietal is a naturally occurring hybrid of several local Dan Cong varietals and grows mostly in the middle mountain area.

Spring Harvest notes: Spring picked Middle Mountain Dan Cong is typically harvested in early April! Our Spring Yu Lan Xiang is fresh, umami, bitter, and astringent, but also has a long lasting fruity sweetness and heady aroma. Like the winter harvest (also available), this a prominent sweet magnolia flower nectar aroma and taste!

Winter Harvest notes: Winter picked Dan Cong is typically picked and processed in Late-October into mid-November and carries a unique taste and feeling. Our winter harvested “Yu Lan Xiang” has a sweet magnolia nectar aroma and thick sweet floral taste that is countered by some vegetal bitterness, however the sweet floral character with a creamy taste/feeling dominates the palate.

Wen Zhong Dan Cong (文种) is a high mountain Dan Cong from Wu Dong area of Guangdong. It’s also picked the earliest of any Dan Cong’s and has a small-medium leaf size. Wen Zhong varietal is low yield and is only harvested in spring. The processing is typical of Dan Cong with a brown-green leaf. The aroma of the dry leaf has hints of fruit, flowers and cannabis. The taste is floral, thick and sweet. It’s very infusable and the pungent nature of it’s aroma and taste leaves a strong impression on those who partake in it. Cha Qi is very strong, attesting to it’s high mountain origin.

Our Xing Ren Xiang 杏仁香 Dan Cong Oolong is grown in Ping Keng Tou 平坑头 Village at an altitude of 870 Meters (Middle Mountain). It comes from trees and bushes growing naturally aged 20-40 years of age. No pesticides or artificial fertilizers were used.

Xing Ren Xiang “Almond Aroma” is one of the many varietals of Dan Cong that has been around for centuries. It is called “almond aroma” because during the roasting process the tea smells much like roasted almonds!

The taste is crisp, bitter-sweet, with notes of honey and cream.

Qi Lan (奇兰) Oolong is originally a varietal of oolong grown in Anxi, but adapted to Wu Yi in the 1930’s. Qi Lan is lightly processed and has a natural almond taste and aroma. The feeling is thick and sweet with a very natural character to it with almost no roasted taste at all. If you are a fan of a lightly roasted Da Hong Pao or Shui Xian you will find this vibrant, sweet and thick tea to your liking.
