										<content:encoded><![CDATA[<p><span>The variety Hei Dan recorded in &#8216;The Compendium of Chinese Tea Varieties&#8217; is the same as Wu Dan. In Minnan dialect, the pronunciations of &#8216;Wu&#8217; (black) and &#8216;Hei&#8217; (black) are the same. The mature leaves of the tea plant have a black and shiny color. Initially, its name was unknown, so it was named &#8216;Wu Dan&#8217;. Despite the differences in the characteristics of the tea plant, &#8216;Wu Dan&#8217; was mistakenly recognized as a variant of &#8216;Huang Dan&#8217; due to the similarity in their names. However, considering the cycle of artificial breeding, it takes about 22-24 years to complete a breeding experiment. Based on written records of cultivation history, the cultivation of Huang Jin Gui (a variety of tea) predates Wu Dan by about half a century. Whether it has undergone human-induced mutations or natural varietal changes during this period is still unknown and may require further verification.</span></p>
<p>The mouth-feel is thick and the taste is thick with an almost Jin Xuan like milk-like creaminess and a bittersweet aftertaste. The leaves are thick and unfurl gradually with each steep, giving many steeps without becoming boring. You&#8217;d expect that such a lovely and unique tea would be expensive, but our offering is affordable and accessible!</p>
<p>The tea is grown in Geqiu Village in Anxi County at an altitude of 650-700 meters by the same tea grower as our . Spring tea is harvested in April and Autumn tea is harvested in the second half of September.</p>

										<content:encoded><![CDATA[<p>This tea is grown by our long-time Anxi oolong tea supplier&#8217;s father in their own family plot in Gande (Anxi). The tea bushes are allowed to grow without any kind of pruning or use of fertilizers or pesticides. The tea is only picked in the spring and autumn and is processed in the traditional method with a light charcoal roast and rolled by hand (not machine). The resulting tea leaves are lightly compressed and easily unfurl during steeping. The taste of the tea itself is very thick and flavorful, with a warm sweetness and minimal astringency. The after-taste in the mouth is also long-lasting and lubricating.</p>
<p>If you are a fan of roasted oolongs, this Tie Guan Yin varietal oolong is sure to please!</p>

Despite being lesser known it is nonetheless a unique Anxi varietal that deserves to be enjoyed in its unadulterated form. Its aromatic qualities share something in common with Huang Jin Gui, but are higher and more floral. The mouth-feel is thick and the taste is thick with an almost Jin Xuan like milk-like creaminess to it. The leaves are thick and unfurl gradually with each steep, giving many steeps without becoming boring. You&#8217;d expect that such a lovely and unique tea would be expensive, but our offering is affordable and accessible!</span></p>

										<content:encoded><![CDATA[<p>We&#8217;ve been selling a Hairy Crab oolong for more than 15 years and we thought it was the best &#8220;Mao Xie&#8221; varietal there was. Now in 2023 we&#8217;ve found another garden in Gan De village, but at a higher altitude! The taste is thick and sweet and the thickness of the leaves allows for many textured steeps! This is truly the King of Hairy Crab!</p>
<p>Mao Xie aka &#8220;Hairy Crab&#8221; is a type of Anxi oolong tea that grows in many places in Anxi county of Fujian. Mao Xie means literally &#8220;Hair of the Crab&#8221; and refers to the hairs on the tea leaves that break off when brewed and float on the top of your cup. Mao Xie has got a thicker and sweeter taste than its more floral counterpart Tie Guan Yin.</p>

<div>Hairy Crab origin story:</div>
<div>Hairy Crab tea is originally produced in Daqiulun, Fumei Village, Daping Township, Anxi County (Fujian). The origin story is based on &#8220;The History of Tea Varieties&#8221; (published in 1979, edited by the Tea Research Institute of Fujian Academy of Agricultural Sciences, 74 pages): &#8220;According to Zhang Jiaxie of Pingzhou Village (71 years old in 1957): &#8220;The 33rd year of Guangxu in the Qing Dynasty (1907) ) I went out to buy cloth and passed by the residence of Daqiulun Gaoxiang in Fumei Village. He said that there is a kind of tea that grows extremely fast, and that it can be picked only two years after planting. I brought back more than 100 plants and planted them in my own tea garden. Highly productive and good quality, so &#8220;hairy crab&#8221; tea spread around Anxi.</div>

<div>Recommended Steeping:</div>
<div>Use 7 grams per 100ml volume gaiwan or teapot.  This tea also needs 100C water and relatively longish steeps.  Hairy Crab varietal has very thick leaves and needs to be pushed a bit to get at its goodness.</div>

										<content:encoded><![CDATA[<p>This is a unique process Tie Guan Yin and Osmanthus flower are put together when the leaves are still freshly picked, balled up in cloth and then vigorously rolled together.  This process breaks and bruises the leaves of the tea and allows the aroma and Osmanthus oils to enter the structure of the tea leaves.   It also results in more broken leaves than you would find in our . </p>
<p>Then the Tie Guan Yin and Osmanthus flowers are baked together at 60C for 14-16 hours.  Several times during the baking process the door to the oven is opened to allow built up heat to escape.  After the baking process is completed the osmanthus flower now brittle and brown (the last three pictures show the osmanthus and tea together just after the roasting process is completed) is entirely removed from the Tie Guan Yin by process of wind and sifting machine.  Then the Tie Guan Yin completed and vacuum packed to maintain it&#8217;s freshness and to keep the osmanthus fragrance imparted to it.</p>
<p>The aroma of the osmanthus when brewing the tea is subtle but noticeable and is a perfect complement to the natural aroma of a very lightly roasted Tie Guan Yin.  The taste is very much that of a typical Tie Guan Yin but there is a nectar sweetness that is subtle and enjoyable which distinguishes this tea from a regular Tie Guan Yin.</p>

<p>A unique aroma and taste accompany this delicate Ben Shan&#8230; there are elements of fresh grass and fruit&#8230; a cooling sensation in the mouth and throat.</p>
