Explore the famous Tea Region of Anxi with our Anxi Oolong Tea Sampler. Taste a curated selection of samples of Tie Guan Yin (4 grades), Hairy Crab, and Jin Guan Yin (a Tie Guan Yin and Huang Jin Gui Hybrid), and develop an appreciation for the distinct aroma, flavor and mouthfeel of these amazing teas.

Anxi is a famous tea producing region near the coast in southern Fujian Province of China. Oolong tea plants are ubiquitous throughout the countryside and grow abundantly in the fertile soil. Harvesting occurs mainly in the Spring and Autumn. After picking the tea it goes through elaborate processing involving withering, tossing, and rolling. Depending on the intention of the producer these teas can also be roasted. There are light, medium, and heavy styles of roasting and all have a market among tea lovers. As a result of modern demands, the teas produced tend to be much less roasted and much more green, floral and sweet. Major tea types from Anxi include the famous tieguanyin 铁观音, and the lesser known mao xie 毛蟹 and ben shan 本山 oolongs as well as huang jin gui 黄金桂 and the newly developed jinguanyin 金观音. For over 15 years we have been working with family farmers who have been growing and making tea for many generations in the Anxi region. Taste from our comprehensive offering of Anxi teas and experience the breadth of flavors from nectar sweet, to toasted nuttiness. These are a treat!

This is a unique process Tie Guan Yin and Osmanthus flower are put together when the leaves are still freshly picked, balled up in cloth and then vigorously rolled together. This process breaks and bruises the leaves of the tea and allows the aroma and Osmanthus oils to enter the structure of the tea leaves. It also results in more broken leaves than you would find in our .

Then the Tie Guan Yin and Osmanthus flowers are baked together at 60C for 14-16 hours. Several times during the baking process the door to the oven is opened to allow built up heat to escape. After the baking process is completed the osmanthus flower now brittle and brown (the last three pictures show the osmanthus and tea together just after the roasting process is completed) is entirely removed from the Tie Guan Yin by process of wind and sifting machine. Then the Tie Guan Yin completed and vacuum packed to maintain it’s freshness and to keep the osmanthus fragrance imparted to it.

The aroma of the osmanthus when brewing the tea is subtle but noticeable and is a perfect complement to the natural aroma of a very lightly roasted Tie Guan Yin. The taste is very much that of a typical Tie Guan Yin but there is a nectar sweetness that is subtle and enjoyable which distinguishes this tea from a regular Tie Guan Yin.

Mao Xie aka “Hairy Crab” is a type of Anxi oolong tea that grows in many places in Anxi county of Fujian. Mao Xie means literally “Hair of the Crab” and refers to the hairs on the tea leaves that break off when brewed and float on the top of your cup. Mao Xie has got a thicker and sweeter taste than its more floral counterpart Tie Guan Yin.

Our Mao Xie Oolong is the highest grade normally available.

Region: Gan De Village in Anxi County

Elevation: 650 Meters

Varietal: Hairy Crab 毛蟹

We also offer a higher grade as well.

** Actual colors of the tea may vary somewhat from pictured. Purchase the smallest amount to try before purchasing larger amounts.

Origin Story:

Hairy Crab tea is originally produced in Daqiulun, Fumei Village, Daping Township, Anxi County (Fujian). The origin story is based on “The History of Tea Varieties” (published in 1979, edited by the Tea Research Institute of Fujian Academy of Agricultural Sciences, 74 pages): “According to Zhang Jiaxie of Pingzhou Village (71 years old in 1957): “The 33rd year of Guangxu in the Qing Dynasty (1907) ) I went out to buy cloth and passed by the residence of Daqiulun Gaoxiang in Fumei Village. He said that there is a kind of tea that grows extremely fast, and that it can be picked only two years after planting. I brought back more than 100 plants and planted them in my own tea garden. Highly productive and good quality, so “hairy crab” tea spread around Anxi.
