										<content:encoded><![CDATA[<p data-mce-fragment="1">Jin Yao Shi (lit. Golden Key 金钥匙) is a unique Wu Yi varietal. Ours is grown in Wu Yi Gong Shan Qian Village, Mi Tuo Temple (武夷宫山前村弥陀寺) at an elevation of 800 meters.</p>
<p data-mce-fragment="1">Jin Yao Shi has been grown for about 100 years by just a few families. Our tea is from one of the two original gardens with leaves being picked from 15 to 60 year old bushes and trees.</p>
<p data-mce-fragment="1">Jin Yao Shi is typically processed with a medium level of roasting and ours is a traditional medium roast style. Smooth with a fruity, sweet minerality! We recommend aging this tea in a sealed pouch or air-tight canister for at least 6 months!</p>

										<content:encoded><![CDATA[<p data-mce-fragment="1">“Lao Cong” (or old bush) Shui Xian is grown in the Jiulongke area of Wu Yi. Jiulongke is included in the “Zheng Yan” (lit. “Proper Rock”, meaning strictly the original area of Wu Yi Mountain) area of Wu Yi Mountain. This Lao Cong is grown and picked from 100-150 year old bushes. Shui Xian is the oldest varietal of Rock Oolong and has been grown in Wu Yi for several hundred years.</p>
<p data-mce-fragment="1">Our Lao Cong Shui Xian has been tirelessly processed by hand with several stages of roasting and resting. The result is a velvety thick Shui Xian, with that special blend of complex umami, mushroom and roasted cannabis smell and taste. Difficult to describe. This is a tea that is perfect for long or shorter term aging. The roasting has prepared it for the long haul and I’d expect within a few months when the roasting taste has settled this tea will really start start to shine like the superstar that it is!</p>

										<content:encoded><![CDATA[<p data-mce-fragment="1">A lovely aged Da Hong Pao from Wu Yi Mountains in Fujian.  This has been lightly roasted just two times over the course of more than a decade and then stored in a good clean condition.  The result is a complex tea with powerful cha qi.</p>
<p data-mce-fragment="1">The early brews have a strong mineral and oily cannabis sweetness, with a dried fruit after-taste.  There is some roast taste from the 2020 re-roast done on this tea, but it&#8217;s subtle and won&#8217;t be noticeable at all soon. In the later infusions the roasted taste fades more and the fruit, mineral sweetness and velvety smoothness takes center stage.  The tea goes 10+ infusions and remains complex and interesting.</p>

<p>Throughout the Phoenix Mountains outlying Chaozhou city in north eastern Guangdong province, grow the historic tea plants used to create &#8220;Dan Cong&#8221; oolong teas. With a rich tradition that goes back over 900 years, these teas have truly magnificent aromas and unique flavors that come from volcanic soil. The tea plants from the high elevation can be hundreds of years old, and have highly sought after qualities. For over 10 years we have been sourcing superb Dan Cong oolong teas from family farmers that have been tending these tea trees for generations. This region has many different types of oolong that range from lightly oxidized to heavily oxidized and also have degrees of roasting. 										<content:encoded><![CDATA[<p><span style="font-weight: 400;">Our &#8220;Wild Ba Xian&#8221; grows wild at 900 meters of altitude (Middle Mountain) above Da An Village. This comes from a small stand of trees that grow naturally and are more than 50 years old.</span></p>
<p><span style="font-weight: 400;">&#8220;Ba Xian&#8221; also known as the Eight Immortals Dan Cong grows in a couple of villages (Phoenix, Ping Keng Tou, and Zhong Shan) in the Wu Dong mountains typically at an elevation of 500-700 meters. The original eight plants of this varietal date back to the Song dynasty. Of the original eight plants, only one survived and it was from this &#8220;Mother&#8221; plant (now called F1) that &#8220;Ba Xian&#8221; survived and spread. For this reason it is also called &#8220;Ba Xian Guo Hai&#8221; (</span><span style="font-weight: 400;"> Cross the Ocean). Today Ba Xian is grown in a few villages (in Wu Dong) but is not mass produced.</span></p>
<p><span style="font-weight: 400;">Ba Xian is a special varietal in that it has 53 distinct aromatic molecules in it. It is also grown completely naturally without the use of pesticides, using composted chicken manure as it&#8217;s sole fertilizer. </span></p>
<p><span style="font-weight: 400;">The taste is strong with an up-front bitterness that quickly fades into a fruit and flower sweetness. It has a distinct White Magnolia (白玉兰香) aroma to it. </span></p>
<p><span style="font-weight: 400;">An incredibly unique tea, grown naturally and carefully processed to preserve its lovely character.</span></p>

										<content:encoded><![CDATA[<p>Our Middle Mountain Saturn Peach Aroma 蟠桃香 Dan Cong Oolong is grown in Shi Tou Jiao Di Village at an altitude of 980 Meters. It comes from trees and bushes growing naturally aged 20-80 years of age. No pesticides or artificial fertilizers were used.</p>
<p><span>This is a medium+ level of roast, that was laboriously roasted, rested and re-roasted many times to achieve a high level of aroma and body. Further aging will benefit this tea as the roast taste transforms this tea in a bouquet of fruit, honey and orchids!</span></p>
<p>Origin of the name: It is named &#8220;Saturn Peach&#8221; because it resembles the fragrance of peach. It also has this scent only because of its reputation in the sky, so it is named &#8220;Saturn Peach.&#8221;</p>
<p>Features: The aroma is similar to that of peach, the fruity aroma is obvious, and the tea soup is fresh and smooth. Steeps many times, while retaining a lasting sweetness.</p>

										<content:encoded><![CDATA[<p>Jin Guan Yin (金观音) is a cross between Tie Guan Yin and Huang Jing Gui! Young Huang Jin Gui tea bushes are cut and then Tie Guan Yin varietal is grafted with it. After 2 years the plant is producing this &#8220;Gold Guan Yin!”</p>
<p>The taste and aroma is very unique carrying with it the thick sweet after-taste of Huang Jin Gui (as well as increased infusability) but has the penetrating aroma and unique Guan Yin taste! There is a slight creamy almost milk aroma to it in early infusions!</p>
