This is pressed from Spring 2021 harvested “Chang Ye Bai Hao” varietal white tea (a hybrid of Fuding Bai Mu Dan and Camellia Taliensis) plants growing in Gelanghe area of Menghai County in Xishuangbanna (Yunnan).

First flush of spring 2021 tea leaves picked from established plantation bushes was processed into something akin to Yue Guang Bai (moonlight white) or Shou Mei by a process of frying (kill green) at a temperature of 120-140c for a few minutes, then rolling in a hot wok at a temperature of about 70c, then allowed to wither for an hour or so and then finally dried in a lower temperature wok at about 50c. Finally the tea is air-dried using fans to slowly “blow-dry” the tea. During this final phase the tea withers again slightly bringing some slight “red tea” taste to the tea.

The brewed tea is sweet, with thick body and lubricating mouth-feel. The sweetness is honey-like some slight floral notes. It brews a deep golden tea soup and slides happily through the mouth and throat bringing a kind of soothing fullness with it. It can be infused 7 or 8 times gong fu style (maybe more depending on your brewing style and leaf quantity).

This something that will age and develop with the coming years and can be stored like pu-erh alongside other raw cakes.

This is a special tea made from Yunnan Camellia Taliensis varietal tea in Jinggu. The bushes grow naturally and are 40-60 years old. The tea is picked during the spring first flush, wilted slightly and then dried with warm wind tunneled through the tea until it is dry. The tea shares a somewhat similar look and taste with white tea when it is young but over time will develop into something closer to red tea (hongcha).

The taste is sweet and thick with malty tones and the tea can be brewed 7 or 8 times before losing its flavor.

This tea is made from a unique Yunnan varietal called “Chang Ye Bai Hao” which is a hybrid of Jinggu Camellia Taliensis and Yunnan large leaf assamica.

The tea was plucked and processed in late March and early April from tea bushes growing in the Mangshi region of Dehong prefecture (far southwestern Yunnan).

The tea is processed much like a Fujian White Peony white tea (shade withering and air drying) and is also a 1 leaf to 1 bud ratio pluck.

The taste is fruity with honey sweetness, with a subtle umami grassiness. The aroma is strong and heady, the mouth-feel is full and thick, with a long-lasting sweetness.

We recommend 90C water for this tea with initially short steeps. If over-steeped (or if the water is too hot) in the early steeps it could become somewhat bitter.

Late March/April Harvest

Region: Mangshi Town, Dehong Prefecture of Yunnan

Shou Mei (寿眉) is a style of White Tea that is grown in the Fuding area of Fujian province of China. The tea is the same varietal that is used to make Bai Hao Yin Zhen (Silver Needles) and Bai Mu Dan (White Peony), but Shou Mei is (less tippy) a 2 or 3 leaf to 1 bud ratio. The processing style also allows for more oxidation through natural air drying.

This Shou Mei was aged as a loose leaf tea for 3 years in Fuding and then for 2 years in Kunming before being pressed into a cake. The result is a lightly aged, but very clean Shou Mei that brews up an incredibly rich orange hued tea soup. The taste is very sweet with notes of honey, and dried fruit. Incredibly viscous and smooth, with no real astringency at all (even at higher temperatures). This is a tea that can be enjoyed fully right now. Further aging would be beneficial but is not at all needed.

A lovely spring Shui Xian from Phoenix Village in Wu Yi mountainous area. Shui Xian varietal is an older varietal that has become less popular since it’s got a stronger taste than Da Hong Pao, Rou Gui and Tie Luo Han. Our Shui Xian is grown by village elders who stubbornly keep their gardens entirely the Shui Xian varietal. The tea bushes are around 60 years old and grow naturally.

This Spring Harvest Shui Xian we offer is a medium oxidation version with a “Honey Aroma” taste (pinyin: Mi Xiang) and mouthfeel. There is a hint of brown sugar, lots of honey and hay in there with a thick mineral base that delivers many infusions of lovely, thick tea soup!

Ever wondered what would happen if you took bittermelon, took out the insides and left the thick rind and then stuffed it with Tie Guan Yin and roasted it? Well now you can try this lovely tea. Strangely enough it’s not bitter at all, the bittermelon rind after roasting commingles with the Tie Guan Yin forming a lovely balanced sweet dark oolong goodness!

** Individual packets contain a cross section of the bittermelon, weight varies from 7 grams to 11 grams. The weight ordered includes the weight of the packaging.

*** Individual packet packaging (design and/or color) may differ from pictures
