										<content:encoded><![CDATA[<p>&#8220;Bao Hong&#8221; tea is from Yi Liang county of Yunnan. Its leaf is quite small and it carries a high level of aroma. The leaves are always picked when very small and fresh during a two hour window of time in the early morning of mid-February. The aroma is intense and fresh. It was first grown in the Tang Dynasty (A.D. 618-907) at the same time a Buddhist Monastery was built on Bao Hong Mountain. The original tea plant was brought by a visiting monk from Fujian. This tea has been growing on Bao Hong Mountain since that time (over 1200 years ago). <br data-mce-fragment="1"><br data-mce-fragment="1">Yi Liang county has a very moderate climate with a mean daily temperature of 16.3 degrees Celsius, and an average yearly rainfall of about 950 centimeters. The Bao Hong Mountain tea garden is an average of 1550-1630 meters above sea level, where it is often shrouded in mist diffusing the sunlight just enough to create a perfect light balance. Bao Hong mountain is a remote area of Yunnan where the tea plants enjoy a natural unadulterated environment. <br data-mce-fragment="1"><br data-mce-fragment="1">The tea itself is full and plump but small. It has a high level of fragrance and the tea soup is thick and awash with the little hairs that grow on the tea leaves.<br data-mce-fragment="1"><br />Comparable in many aspects to a Dragon Well, but unique in its own right.</p>

										<content:encoded><![CDATA[<p>Tender shoots of tea buds are plucked during the first flush of spring (or late autumn after the monsoons have dried up) and then expertly processed by hand into these tightly rolled pure bud &#8220;pearls&#8221; of fresh tea.</p>
<p>Our Imperial Grade Bi Luo Chun was grown in the town of Mojiang in Simao. The tea varietal used is a hybrid of Assamica called Yunkang #100.</p>
<p>The taste of the tea is sweet, thick and vibrant. There is some slight astringency that counters the sweetness, lending it depth and complexity.</p>
<p>We recommend brewing with 90C water. One flash rinse (about 10 seconds), then brew for 15-20 seconds and enjoy! With each successive infusion add 15 seconds.</p>
<p>Spring Harvest is Mid-February to Early-March &#038; the Autumn Harvest is Late-September (choose from harvest &#038; year in the drop-down menu)</p>

										<content:encoded><![CDATA[<p>This tea was picked from the first flush of spring harvest high in the mountains of Simao. These tender young buds were processed in a way that is similar to how other premium small-leaf tea varietals (like Emei Sichuan Zhu Ye Qing) are processed elsewhere in China, but as this is from a large-leaf tea varietal of Yunnan (Camellia Sinensis var. Assamica), it retains some distinct characteristics and a bolder large-leaf taste. This tea is high in tannins which give it a penetrating vegetal aroma and a strong &#8220;umami&#8221; flavor which coats the mouth and throat.</p>
<p>These leaves are best brewed in a clear glass or cha hai which shows off the tendency of the leaves to line up vertically, some floating at the surface and others sinking to the bottom.</p>

They have been selected from trusted growers located on the outskirts of Hangzhou, Zhejiang. The temperate, overcast and rainy winter climate of Hangzhou contributes to the tenderness and sweetness of the buds and leaves which are picked early in the Spring and are then expertly pan-fried in a wok which further brings out the tea&#8217;s unique characteristics, with slight sweet and bitter subtleties and the distinguished &#8216;roasted chestnut&#8217; aroma.</span></p>
<p><span>This grade of tea has smaller and more uniform leaves than our Fancy Grade of Long Jing. <p><span>The recommended way to brew Dragon Well tea is to use approximately 4 or 5 grams of tea for 250ml of water, in a glass cup or glass cha hai pitcher. Though some may prefer to slightly rinse the first infusion, the most common way is to NOT rinse the leaves. Use water that is about 80~90 degrees and infuse for 1 to 2 minutes before drinking. Once the water in the glass/pitcher reaches halfway, pour more hot water and fill to the top. This can be repeated several times, mostly retaining the original flavor of the tea. No filter is needed and many enjoy chewing on or eating the tender leaves.</span></p>

										<content:encoded><![CDATA[<p>Our Dragon Well (Long Jing) Teas were picked in the early Spring before the Qing Ming holiday. They have been selected from trusted growers located on the outskirts of Hangzhou, Zhejiang. The temperate, overcast and rainy winter climate of Hangzhou contributes to the tenderness and sweetness of the buds and leaves which are picked early in the Spring and are then expertly pan-fried in a wok which further brings out the tea&#8217;s unique characteristics, with slight sweet and bitter subtleties and the distinguished &#8216;roasted chestnut&#8217; aroma.</p>
<p>This is our highest grade of Long Jing tea! The leaves and buds are extremely small and uniform and are light green in color. The soup produced is exceptionally soft and fragrant, and a very pleasant &#8216;hui gan&#8217; lingers in the back of the mouth and throat well after drinking. The taste and aroma last through many infusions, and the brewed leaves give a particularly good mouth-feel when chewed on!</p>
<p>We recommend you order other grades first before ordering this one. Taste this side by side with Premium and Fancy grades we offer and you will taste the difference.</p>

<p style="text-align: left;"><span style="font-size: 18pt;"><span style="font-size: 12pt;">This lovely tea is grown in Mengku County of Lincang in a village called &#8220;Dofu Zhai&#8221; (aka Tofu Village).  It&#8217;s a local varietal, a hybrid of pure Assamica and Change Ye Bai Hao.  The tea was picked and processed between March 4th and 7th.  The tea is fried by and in a wok, rolled, wilted very very briefly and then dried by hand in a wok again.  At this final stage the tea is pressed flat again to make is straight and pointy.  The finished product is a silver and green needled tea that locals call &#8220;Song Zhen&#8221; (Pine Needles).</span></span></p>
